Soup:
Boil
pot of water, when water is boiling place whole onion and
shredded carrot.
Cook
for 20 min, add salt.
Add
spinach and cook until is done approx. 15 min. Remove onion.
Set aside.
Salad:
Cut
cucumbers, green onions and eggs in small, ¼ inch pc’s.
Chop some dill.
Mix
all together.
Footnotes:
Serve
cold, mix salad with soup.
One
tablespoon of salad per bowl of soup. Top with a dab of sour
cream.
